I am looking into applying statistical and first-principles modelling tools to help scale up the production of alternative protein sources from fungi or yeast. We are also able to perform large-scale cultivation using bioreactors here. We are looking for partners interested in the area that could provide interesting mycelial strains and/or applications. SUSFERM, established in 2021 at the University College Cork, is a Centre for Sustainable Fermentation and Bioprocessing Systems focused on sustainable food production and the circular bioeconomy. This multidisciplinary centre integrates expertise from Microbiology, Food and Nutritional Sciences, and Process & Chemical Engineering to tackle scientific and technological challenges related to microbial fermentation. Central to SUSFERM's research is microbial fermentation science, with programs aimed at enhancing the capacity to employ microbes in the Food, Drink, and Bioeconomy sectors. The centre is also actively developing training programs to equip MSc and PhD graduates with the skills and knowledge to address industry requirements. As a strategic partner for the biotechnology sector, SUSFERM fosters innovation in sustainability by encouraging collaborative research partnerships with industrial partners. SUSFERM maintains a tight focus on sustainability in food production and the bioeconomy, leveraging microbial diversity for food systems and synthetic cell factories in biorefineries?.
